Hand made breads without fat or sugar, cooked on the stone.


Doughs are kneaded in a kneader, without fat or sugar. Shaping is mainly hand made, except for baguettes that are shaped in a ‘’baguette roller’’ (‘’façonneuse).
Breads are cooked on the stone of the electrical oven (Renewable energy in Quebec)
